Every now and then, I keep switching meals in my diet and took the healthier lighter route today with this super simple Zoodles Salad, that’s got Zucchini, Red Cabbage, Iceberg Lettuce, Carrots, Red & Yellow Bell Peppers, all mixed with a little sesame oil and toasted sesame seeds. It literally is that easy and tastes really nice & crunchy. It’s all about the simplicity and freshness in this salad. 🥗

Ingredients (Serves 4):
1 whole Zucchini (Peeled into long flat noodle like slices)
1 cup Iceberg Lettuce (Chopped)
1 cup Red Cabbage (Thinly sliced)
1 whole Carrot (Thinly sliced)
1 Red Bell Pepper (Thinly Sliced)
1 Yellow Bell Pepper (Thinly Sliced)
2 tbsp Sesame Oil
2 tbsp Sesame Seeds (Toasted)
Salt, Pepper to taste
1. Get all the ingredients ready and mix in a bowl. Make sure everything is thinly sliced.
2. Add sesame oil, salt & pepper.
3. On a pan, toast some sesame seeds and mix with the salad and you’re done. That’s literally it for making this Zoodles Salad!
