How about a Tuna Salad? Usually when it comes to tuna, I either enjoy it in sushi, sashimi or straight up tuna and egg sandwiches. I wanted to make a salad for a change and got inspired by Marions Kitchen to make this light & refreshing Thai Style Tuna Salad.

This Tuna Salad has got such a lovely balance of flavours and wonderful acidity. It’s perfect for the summers and the best part is you enjoy these by taking a spoonful of the tuna mix and place them on the lettuce leaves like cups and enjoy it. 🙂

Ingredients (Serves 4):

2 Cans of Tuna (160g each) 
1 Lemon (squeezed)
2 Green Onions (chopped)
2 Cucumbers (peeled and diced)
2 tbsp Fish Sauce (Use a mix of 1bsp soy sauce & 1 tbsp vinegar instead if you don’t have fish sauce)
1 tbsp Honey
1 tsp Tobasco Sauce
1 tsp Red Chilli Flakes
1/4 cup Mint Leaves 
2 tbsp Coriander Leaves
16-18 Green Lettuce Leaves
8-10 Iceburg Lettuce Leaves

Method:
1. Start with mixing tuna, lemon, fish sauce, honey, tobasco sauce and red chilli flakes in a bowl.
2. Next throw in your chopped cucumber, green onions, mint leaves and coriander leaves. Toss well.
3. Let it chill in the fridge for about 30 minutes and serve with the lettuce leaves, by placing a spoonful on the lettuce leaves (using them as cups) and enjoy!
