I love this easy and simple Soba Noodle Salad recipe. It barely takes any time to make and it is really light & refreshing. This Crabstick Soba Noodle Salad is also with Cucumbers, Onions and Pickled Ginger. I love how you can literally eat Soba hot or cold, and there are so many wonderful recipes out there. Ingredients (Serves 1)

Salad Dressing:
1 tsp Light Soy Sauce
1/2 tsp Sesame Oil
1/2 tsp Mirin

1 Cucumber (sliced lengthwise)
1/2 Onion (thinly sliced)
1 tsp Ginger (grated, pickled in a little mirin)
4-5 Crabsticks (frozen)
150g Soba Noodles
Water for boiling
Cold water for shocking noodles


1. Start with the veggies, with 1 cucumber thinly sliced lengthwise, 1/2 onion thinly sliced and 1 tsp grated ginger pickled in mirin. Put these aside and move onto the crabsticks.
2. Steam 4-5 pieces of frozen store bought crabsticks for about 4-5 minutes. Finish steaming and keep aside.
3. Then boil Soba noodles (150g) in hot water for about 2 minutes, then shock them in cold water to stop cooking.
4. The dressing is made of light soy sauce (1 tsp), sesame oil (1/2 tsp) and mirin (1/2 tsp). Pour the dressing over Soba noodles, mix in your other ingredients and there you have a deliciously light & refreshing Soba noodle salad.
