I follow a lot of food shows, mostly food travel, dreaming about visiting those places and trying all that food. It’s funny how I ended up cooking a dish, Chicken Karahi, by one of my favorite food vloggers learned on his trips. Here’s my Chicken Karahi inspired by the awesome Mark Wiens, @migrationology 🌶️ The recipe was simple, extremely flavorful and I really enjoyed cooking it with all those fumes in my kitchen. Ingredients (Serves 3):

500g Chicken
2 Tomatoes (whole)
4-5 Garlic Cloves (finely chopped)
1 tbsp Ginger (chopped)
5-6 Green Chillies (slit in half)
1/2 tbsp Coriander Powder
1/2 tbsp Jeera Powder
1/2 tbsp Garam Masala
1 tsp Turmeric Powder
1 tsp Pepper Powder
1 tsp Red Chilli Powder
1/2 tbsp Kasuri Methi
2 tbsp Butter
Salt to taste
Ginger Julienne for garnish
Coriander leaves for garnish
1/2 cup Water
Oil for cooking

Chicken Marinade:
1 tbsp Yogurt
1 tsp Lemon Juice
1 tsp Salt
1 tsp Pepper
1/2 tbsp Red Chilli Powder
1/2 tbsp Garam Masala
1/2 tsp Turmeric Powder

Method:
1. Start with marinating your chicken. Let it sit and marinate for atleast an hour
2. Next take a kadhai/wok pan, heat it with oil and fry your chicken for about 2-3 minutes on high heat.
3. Add garlic and ginger, and cook for a minute until raw smell goes.
4. Next add your whole tomatoes to the kadhai, and let it cook for about 10-15 minutes on low heat. Add water if it’s too dry and if you want a little bit of gravy (I added 1/2 cup water)
5. The tomato peels will start to come off, so peel them in the kadhai itself with the help of a tong. Once peeled, mash the tomatoes in the kadhai itself. Mash it to the point where it’s almost like sauce.
6. Now add all your masalas, kasuri methi and green chillies. Increase the flame to medium and mix everything well so the masalas are incorporated.
7. Cook for about 3-5 minutes, add some butter to the gravy, toss well and you’re done. Garnish with coriander leaves, ginger julienne, kasuri methi and green chillies. This Chicken Karahi is served best with parathas or naans (as you like)
