Ingredients (Serves 3-4):

2-3 Beetroots (grated)
2 cups Spinach Leaves
2 Onions (finely chopped)
1 tbsp Ginger Garlic Paste
1 tsp Mustard Seeds
1/2 tsp Cumin Seeds
1 tsp Coriander Powder
1/2 tsp Garam Masala
1/2 tsp Red Chilli Powder
1/4 tsp Salt
2 tbsp Peanuts
2 Green Chillis (Whole)
2 tbsp Coconut Oil
12-15 Curry Leaves

Method:

1. Heat a kadhai, add 2 tbsp Coconut Oil once hot and then add Mustard Seeds & Cumin Seeds. Let them splatter on high heat, and then add your chopped onions, peanuts and green chili.
2. Cook on medium heat for about 5 minutes till the onions turn soft and start to brown.
3. Now add your ginger garlic paste, cook till the raw smell goes for about a minute.
4. Next add your masalas – garam masala, red chilli powder, coriander powder & salt. Stir all of it well & cook for about 1-2 minutes on low to medium heat.5. Then add your grated beetroots. Mix well & cook for another 2-3 minutes on medium heat.
5. Add your Spinach leaves and mix well, cook for about 1-2minutes on low heat covered till the spinach leaves start to wilt.7. Finally, add your curry leaves and stir well, cook for a minute or two, and that’s it!
