Banana Chocolate Oatmeal Pancakes


It’s been a while since I’ve made pancakes and since I’m sort of on a health trip, I made some Banana Chocolate Oatmeal Pancakes topped with some caramelised bananas, dried berries, granola and drizzled with a little maple syrup on top. I usually always have a savoury balance with pancakes, like adding crispy bacon, but in this case kept it on the healthier side. There’s so much variation one could experiment with pancakes in terms of flavours, add ons, sauces, etc. No wonder I love Pancakes ❤️

Ingredients (Makes 5-6 Pancakes):

3/4 cup Oats (I used Quaker Oats)
1/2 cup Milk / Coconut Milk
1 1/2 tsp Baking Powder
1 Egg
1 Banana (ripe, mashed)
1 tsp Vanilla Essence
2 tbsp Cocoa Powder
1 tbsp Chocolate Shavings
1 tbsp Light Brown Sugar
1 tsp Cinnamon Powder
Pinch of Salt

Method:

1. Mix all these ingredients in a blender until a nice thick batter is formed.

2. Take a flat pan, lightly grease it, and once hot, add a large spoonful of your batter to make the pancakes one by one cooked on low heat and covered for about 2-3 minutes on each side.

3. Garnish with fresh/dried berries, caramelised bananas, some granola and maple syrup.
